Skate Wing (Ray Wing)

One of our favourite fish, a truly under-appreciated UK gem, which is landed in abundance every single day on Brixham Fish Market. Ray, commonly known as Skate Wing is a meaty fish which lends itself beautifully for being chargrilled, BBQ’d or pan fried with a lovely caper butter sauce.

Our recommendation –

Season with salt, pepper, drizzle with olive oil and cook on the BBQ, serve with a caper butter sauce. If you fancy cooking over fire, we have a recipe for that here.
